Salvatore Monteli is an Italian chef with two Michelin stars to his name and a career that has crossed the world — kitchens in Australia, Canada and the United States among them. Everywhere he cooked, he carried the same thing with him: the Italian food he grew up with.
At VERA he cooks the Italy he knows — slow ragùs, hand-rolled pasta, bread fried to order, dishes that taste of somewhere specific. The produce is sourced from Italy, and a few modern ideas do the rest: a contemporary voice, an honest accent.
The two stars are real, but they live in the food rather than on the wall. You'll taste it long before he'd ever mention it.
